Possibly, though I think just plasterboarding over isn't really a very suitable way to do it. Damp would probably get in and your plasterboard would disintegrate.
What would you do if the boiler/pipework sprung a leak?
And as you won't have any way of heating the water therein, why do you want to keep the boiler?

No you can not cover it up atall. Back boilers rely on air to make compleate combustion. If you sealed it in it would not be able to get air therfore creating incomplete combustion leading to carbon monoxide being produced. And there is also maintanance issues.

Sorry, I misunderstood the question. I think I was thinking along the lines of an open fire back boiler IE there'd be a boiler, but no gas involved. I didn't know you could separate the fire and backboiler parts of a gas fire.
