How about the Celtic Manor resort in Newport http://www.celtic-manor.com/ If you like Golf you could leave her in the Spa whilst having a round. Beautiful place for a weekend IMO
You could taker her to Frogg Manor Hotel in Cheshire. I must admit I haven't been however my husband and I are thinking of going in a couple of weeks. A friend of mine and her husband went a few months ago and have absolutely raved about the place. The owner and his partner are two really eccentric characters and run the whole hotel themselves. Have a look at the site and read the review from the american who visited -it's brilliant.

A spa is a brilliant idea, but I did think that The Sanctuary in Covent Garden was women only?
A weekend away in the countryside, in a hotel with a spa and some treatments thrown in, should please her. If you make it near a town/city with good shops, then she will probably love you forever. Bath, Oxford, Winchester, Norwich are good ideas.
Where abouts do you live? Also, don't travel too far. A weekend away can be spoilt by too long a drive, and getting caught up in traffic. Make it extra special by arranging for some flowers in the room, or maybe chocs and champagne.
