Is there a set way they should be fitted, ie. hot on the left / right? Or is it up to the fitter?

You can have them anyway you want but standard practice is to fit hot to the left.
hot tap has the red tag on it. i'm so helpfull. i'll be off now.
seriously , if fitting them to a bath and the taps end of the bath is in a corner. fit the hot tap furthest away from you .i.e. nearest the wall. that way when reaching for the cold tap you won't lean on/touch the hot tap by mistake and burn yourself.

Regulations state that hot taps are always fitted to the left. The reason behind this is so that the blind know which is the hot and do not scald themselves. This is a UK regulation not sure about other countries. And of coarse you always find peoples homes that are not correct so if you have the hot on the right you're fitter did not comply to reg's or it is so old it is probably an illegal tap anyways.
....illegal tap....? Surely not serious.....?
