The cooler the air the less water vapour it can contain. When the warm air inside your car comes into contact with the cold windows, the temperature of the air drops. Water vapour must be released from the air as a result of this temperature drop. The vapour condenses (hence �condensation�) into liquid water which is deposited on the windows.
To avoid this happening you must either lower the temperature of the air inside or warm the windows up (there�s not much you can do about the outside air temperature). Air conditioning can achieve the former (and it also removes water vapour from the air inside as its temperature is lowered). Windscreen heaters can achieve the latter. Easier still (but a little less comfortable) is to open all the windows.
