I have some aluminium chequerplate that I'm wanting to cut out but I think it'll be too thick for this so figured I could use an angle grinder to cut/grind it then use this to finish it ?

I use it for cleaning and sharpening tools, sharpening my power lawn mower blade (there's a kit for proper angle), just finished installing 10 recessed ceiling lights the holes cut using the circular guide, finished edges of a newly made bedside table, countersink screw holes to accept dowling, reset door lock in door jamb, fine cut brick surface to accept address plaque, blind cut neighbors flooring to install dryer vent, helped neighbor install hardwood flooring by trimmin bottoms of door jambs... really, a very useful and versatile tool...

I'd use a metal-cutting saw on aluminium. A hacksaw will do it. But aluminium tends to clog the blade of any saw since it gets stuck in the teeth,. So a useful tip is to rub a stick of chalk along the teeth. This fills them in, and stops the aluminium getting caught. This also works well on files, which otherwise are notorious for becoming useless when the teeth become filled with aluminium.
Dremel tools must be used with caution. They can rotate so fast that any undue pressure will cause burning on whatever you're working on. I don't use Dremels, for that reason, and prefer to use somethinmg else.
