Do you have to pick the tops out of young peas.

I assume you are talking about edible peas - I never pinch the tips but for sweet peas I do pinch out the growing tip so they branch out and produce more shoots. I'm sure, if you want to, it would be possible to do so with garden peas, but I have never heard of anyone doing so.
