Would it be a good idea to use a hot air gun to remove a painted stiple ceiling finish from the ceiling? if not is there any other way?

I used a wall paper steamer to remove a diy painted artex ceiling, It did remove it quite well and quick, although you have constant wet arms where the water drips down, hope this is of some use
If the finish has been applied on top of lining paper then strip as for wall paper. If the finish has been applied direct to plaster or plasterboard the only solution is careful use of elbow grease. It might be easier and therefore cheaper to reline the ceiling with plasterboard. Good luck.
