how to kill flies

we are a catering business and we are wanting to know what is a safe way to get rid of the flies, we have tried flie spray but we carnt use it in the bar or round food, the fly paper look unattractive, and the zapper in the kithchen dosent work. we are desperate to know how to get them away

quarter fill a jam jar with sweet fluid. Punch a finger sized hole on edge of lid and put lid on jar. Insert a wooden ice-lolly stick to protrude out of lid and to absorb sweet fluid. The fly jumps onto the stick and climbs down into jar for more juice then drowns as it can't find its way out.

Beer would be good as it would be drunk and drown quicker.
Have a bright light in ONE position only so flies gather in the one spot.......then swat the blighters.
I would prefer it if places kept the places free from flies - ie prevented them from entering in the first place. I have a mesh screen on my back door (which leads into my kitchen) - just a piece of net curtain with a weight on the bottom and rarely get any flies (even though I live with two cats and their food is an attraction). Any that do get through have to deal with Ruby (an 18 month old domestic shorthaired female cat aka monster) who is a master in the art of catching and eating flies.
I take it you are talking about fruit flyies, tiny little midge type flies.
if you are the only reason they are there is because you are not cleaning well enough behind the bar, as they feed on the beer that have turned to sticky syrup which you will find in every crevice behind that bar. the only thing you can do is scrub and make sure that you wash down properly every day on and under the shelves and especaily around the pumps and glasswash area
you dont pay your staff to stand around chatting get them scrubbing lol
And I am by no means saying you are clean, you are just not beer fly clean, I ran pubs and resturants for 15 years and they only appear if the staff are slacking on their cleaning.
The fly zapper or 'insectocuter' must have the UV tubes changed once a year otherwise the flies can't see the UV light and then it doesn't work....
