Rhubarb

I planted Victoria rhubarb and didn't harvest any the first year as bidden. This year (the 2nd year) it is growing really well and cooks and tastes fine but the stalks remain green. Shouldn't they be pink?

I have mine in a very sunny position and it`s a bit of both.
