Since having my gas supply pipe upgraded from 25mm to 50mm the gas-heated hot water seems to have become very much hotter- almost boiling I would say.

Is this safe or do I need to I turn the temperature down?

And is it anything to do with upgrading the pipe (I can't see how)

You were obviously low on pressure before the alteration. Mains gas is transported at pressure throughout the grid (national system). The amount of gas available to your domestic supply (or any supply) is a function of pipe diameter and pipe length. You may have had to set your appliance at maximum previously and will need to set it a little lower if you are uncomfortable.
