Sicilian Caponata makes a change from ratatouille and is delicious served hot or cold.
Salads based around grains and/or puy lentils with different vegetables some roasted and some raw, aim for lots of different colours to get a balance of vitamins.

Why not try a really good Ratatouille ?
I learned to make this on an open fire, on a Greek Island over 40 years ago ! The secret is par-fry all the ingredients first and then mix together....red, green and yellow peppers, aubergines, tomatoes, courgettes, onions. Fry in olive oil, and add garlic if you like. Some red wine and fresh Basil !
I was told a secret ingredient all those years ago...the zest of a big orange, with the juice added as well. Put that in last, to get the best of the orangey taste ! If you have fried all these first, it will only take 10 mins in a hot oven, to combine and cook.
This is simply scrumptious with loads of buttered french bread and is just as delicious cold, as hot. Sprinkle some real Parmesan cheese over it if you like.
I can taste it now !

You haven't give us much to go on....This was my simple and tasty supper.
white fish pan fried., shredded iceberg lettuce, finely sliced peppers (red green and yellow). finely sliced onion. Mix the salad in a bowl squeeze the juice of half a lime onto the salad.
I had this with chips but rice or boiled spuds would also have been great.
If you haven't got a mandolin to slice the peppers, onion etc...get one. Amazon.co.uk User Recommendation

Rice salad...rice with finely chopped onion, peppers, cucumber, peas, sweetcorn, pineapple or mandarin oranges....anything you like really. Throw in some jumbo prawns or a tin of tuna/Mackerel
Pasta salad....pretty much as above but mix with mayo or pessata.
You could even put a couple of chopped hard boiled eggs in.
Talking of eggs...what about egg fried rice. Do as per rice salad, throw it in a frying pan or wok, add a few glugs of soy sauce or teryaki and then add 2 or 3 beaten eggs and mix well. Cook on low heat until the eggs have scrambled.
