Preparing Potatoes Overnight

Is it OK to leave prepared potatoes overnight in cold water, without refrigeration, we wont have room in the fridge with all the other Xmas food!
Also parsnips, cover with little oil in bag out of fridge?

Yup, I do it most Christmases, same for the parsnips

Thanks! That's what i'll do then.
When we had a coal fire, I used to put a piece of washed coal in the water. It keeps them, white.
Like that tip Chrissa. Some spuds do brown up a little, will try that. I start the roast spuds and parsnips off in the oven, then turn it off and fire them up again when I'm ready.

do you have room in the freezer?
They will be fine over night. Just cover with cold water and a lid,and keep in a cool place.
I do it all the time at work. Same for all veg.
I always did it when cooking for the family, all veg prepped and in cold water over night.
^^unfortunately, all the water-soluble nutrients in the vegetables leach into the water and are thrown away!
I guess its a choice at Christmas...get your veg done ahead of time...or get your vitamins.

One day out of 365 and I get to be there at pressie time, worked for us.
Par boiling the spuds and parsnips in readiness for roasting and then freezing is another option.......if there's room in the freezer of course.

At least this way you get them out of the way a few days ahead.

Just do the spuds now. Use the water for your gravy.

My Mum used to put them in a bucket and leave them outside overnight with a cover and weight on top
