I found this site which looks very useful.

I think you've been watching the new series of The Apprentice.
you need to be a happy person , polite and work hard always respect your customer and have a smile on your face , dont rob or cheat people and sell something that you belive in .. wear warm clothes have plenty of change and plenty of storage , get to the market / wholesale before anyone else always leave your site clean and tidy and help other traders while you are trading . attitude is everything , smile and be approachable , laugh ...

More research than you think into the type of market that you want to have a pitch at. See who else sells what you want to, and see if the market manager has space for a similar pitch anyway. Check stall rates - do they hire the unit or do you have to supply and erect your own? Do you need power too? Reliable vehicle to take stock to site is also a must.

NMTF will give you the insurances you need.

Environmental health at your Council will tell you about requirments for food trading. And as above - attitude, and a love of getting up before the rest of the planet.
