I've done a search and can't find anything so I was wondering if it was possible to withhold a number when sending and SMS text, like dialling 141 before a phone number. I've tried using 141 and this doesn't seem to work.

No. The only way to send anonymous texts is to subscribe to a forwarding service
Easiest thing to do if you have an unlocked pay as you go is to buy a new SIM card and use that - you can get them for a quid!
