Ink erasers simply rub away the paper ... just a fine layer which takes the ink with it.

No, I mean the type which have an eraser on one end, and a corrector on the other, used for erasing washable blue ink.
You may be thinking of a liquid which basically acts as a bleach. The ink is still there but its colour has been neutralised - a chemically knowledgeable individual could prove this by at least partly reversing the process, but most of the time very little trace will otherwise be visible (doesn't work on anything but white or at least very pale paper).
