Does the fan blow cool air into the oven or extract the hot air? What are the advantages of the fan and what type of dish would particularly benefit from the fan?

I think it just circulates the air in the oven. They cook faster than a conventional oven, and also generally you don't have to put something on a certain shelf in the oven: the bottom shelf cooks about as fast as the top.
A normal oven gets hotter at the top of the oven, The fan just evenly distribute the heat heat by circulating the air within.
In my fan oven the heating element surrounds the fan so giving an even temperature - suppposedly !
You'll need to turn the temperature down as well from that of a conventional oven or you might end up cremating the food - it is generally 20 degress C less
