Topping up engine oil in 1994 Honda Civic

When I brake, especially if suddenly, the oil light flashes on, and a check with the dipstick verifies the oil level is very low.

(a) Under those circumstances, how much oil should I add?

(b) If I'm not sure whether the oil that's been used is 5W-30 or 10W-30, what should I add?
