sorry, couldn't post on your question, browser wouldn't let me. Rigadon, I am 100% certain you have had a parent who was very critical of you. I don't want to be all pyscho babbly on you, but the things that most irritate you about your partners are probably the things you have been critised for over and over again from a very early age. You have learnt/been trained to see minor human behaviours as intolerable offences. You need to unlearn this, and it's going to be difficult but you will do it if you really want to. You will need to question everything you say to someone and recognise when you are using emotional blackmail or saying things to have a negative effect on someone and try and work out why. I suggest some self help books with a cognitive therapy theme, and some books on anger management. Also counselling and therapy with someone you can find a rapport with (don't give up if you don't find a therapist you like). Also consider whether you have depression - anger and irritability are a symptom of this.
