obviously you cant run a string line on a curved wall so what's the procedure in keeping it level?

Spirit level, plus a former for keeping the curve the same.
Its isn't easy.

To determine the line of the curve, you could use a piece of string attached to a point marked by the centre of that curve. If the curve is to a given radius, then ensure that the string is the required radius. You will need intersection points and tangents though .... lol - best leave it to a professional builder ! I recently supervised a job where the contractor set out the whole of the (fairly complex) layout using pieces of string (I kid you not !) and there was not a theodolite or total station to be seen anywhere ! It all worked out really nicely though...
