yes, you can do it online. Go to a price comparison site (comparethemeerkats, confused, gocompare etc) and sift through them. The best won't be the cheapest.

The Post Office's is highly thought of

We shopped about recently and got insurance at a decent price and right away from Virgin.co.uk

Once I do ot online will I have to wait for travel documents to reach me by post as I travel next wednesday
If you buy on-line they usually email the certificate to you. Don't hang around though, do it tonight.
I think they'll just email you the policy and you can print it out.
I was able to print mine right away

Thanks guys.
If you complete your application for an EHIC tonight on-line, you might be lucky and receive it before you go.

If you pop into your local Post Office they will be able to give you your policy document there and then.
just to add to Hymie's answer, you should have an EHIC as it gets you medical treatment abroad free, or at the same price locals pay; but it's not a substitute for medical insurance.
