Porting mobile phone number from one network to another .....

Has anyone any experience of doing this - how exactly does it work?
I'm on a sim-only plan and unless my current provider (Three) can match the deal that I've just found (new deal includes a phone and is not sim-only), then I'm going to be switching to Vodafone.
I've just had 5000 business cards printed with my mobile number on, so I need to keeep my current number.
I know that I'll get a PAC from Three and I'll prob have to give 30 days notice, which will prob mean I'll have 2 contracts running temporarily.
How does it work - will the number just switch over when my 30 days notice are up, or will it switch over when I give my new network the PAC?
