Any decent publican should know what type of stock he needs just by looking in his cellar! On top of that, most pubs use EPOS (electronic point of sale) systems which tracks their sales and can advise on orders. The only job similar to your description, that I can think of, is a stocktaker who works for a brewery or pub company. These people visit managed pubs to check that the publican's accounts are in order or call on tenanted pubs either when the pub is about to change hands or when the publican is filing his tax returns. Some stocktakers are self-employed (but work can be very hard to come by, especially at first). Most stocktakers normally work within the auditing or accounts departments of pub or brewery companies and often have qualifications in the financial field.
