If someone is Subcontracted to a company, do they legally owe their Contractor any working notice when they quit??

It depends on the terms of the contract, there could be financial penalties if they just walk off without finishing a job and could be sued for breach of contract. If they are working for regular wages i.e. employed then normal employment terms will apply.
