My wife works nights in a private residential care home in her last paypacket she recieved notification that day and night staff are to be paid the same rate regardless of what shifts they work. This means she has a small payrise for her shifts during the week but a pay cut for weekend shifts.
Is there anything in emploment law that says night time workers should be paid a higher rate due to unsocialable hours?

Equally employers can't unilaterally change established conditions of employment of staff without proper consultation, which appears to be what has happened. What can she do about it? - check the grievance procedure (if the company has one) and start a grievance process. Delicate use of the words 'I consider that I might have a valid case for constructive dismissal' might help the employer think about backing down.
