Anyone know about employment law?

I'll try and keep it short...
I've got 2 jobs, a full-time 9-5 day job and 12 hours per week in my local shop, 2 evenings and a weened afternoon. I do this as I live alone and need the money, not for fun!
Due to a reduction in trade, the boss of the shop is looking to reduce the opening hours and therefore staff hours.
He is proposing to change the evening shift from 6:00pm-9:30pm to 5:00pm-8:00pm and also says that each member of staff will be required to work one day shift, one evening and one weekend.
Me and another girl (also with a f/t job elsewhere) will obviously not be able to to the day shift and it is highly unlikely we will get to the evening shift for 5:00pm.
What will happen? Can he change our hours anyway and if we can't do it, sack us? Will he have to make us redundant?
We have both been there 8 years, nobody that works there has ever had a written contract and it is just a small local shop with 12 employees, not Tesco or anything!
