How would you set about getting a death certificate for someone who died in Turkey?

If it was a British subject who had died there the British Consul could help.

I mean a new certificate for a recent death.

Thank you Sandy, I am asking this on behalf of someone else, and will pass on the information.
If a death takes place abroad it must be registered according to the laws of that country. Provided the deceased was a British subject it should also be reported to the British Consulate who should be able to arrange for the death to be registered in the UK.
