The Post Office does not treat post as missing until 15 working days - three weeks. It is unreasonable to expect your buyer to wait that long for a refund and if the buyer paid by PayPal will automatically get after 7 days as you can't provide a tracking number.
You can be a good eBayer and refund the money. Then claim compensation from the Post Office using your Certificate of Posting (the receipt). Remember to refund the postage costs as well.

I had exact same experience, and I simply filled in the royal mail claims form and sent it in with my receipts and a print out from ebay as proof of item cost and postage. In a couple of weeks I got refunded.
It isn't a quick process but it worked for me.
BTW I suspect the buyer actually had received the goods but was simply pulling one because they didn't have to sign. First email he sent said 'you should always use recorded delivery'.
Not a buyer in Aberfeldy by any chance?

You can still claim for non delivery and get back the amount payed and the postage. You need the proof of posting reciept and a print out of the ebay sale and the paypal payment. You have to wait 15 working days before you can start the claim. You get a claim form from the post office.
I had this happen a few weeks ago with ebay, an item went missing 1st class non recorded, I put in the claim anf got the full price and postage back within 2 weeks. Tell the buyer you are starting a claim with Royal Mail to trace the item and get a refund. Not saying it is the case but suprisingly when you tell a buyer that a trace and claim is being started they often say the item has suddenly turned up ! Most ebayers are honest but some will claim it has not turned up to get a refund.

5 days including the weekend is only 3 working days as Saturday / Sunday are not included in the Royal Mail delivery estimates . You have not even got to the estimated delivery time for a 1st class package yet . ebay will not accept a claim for non delivery until a full working week after the estimated delivery date so with the bank holiday the buyer can not even start a non delivery claim until the middle / end of next week.
I too think it's too soon to declare this lost in the post. I'd ask the buyer to check with neighbours, just in case it has been left with someone and they've forgotten to hand it over (happened to me once).
I'd also ask the buyer if they will get in touch with the local sorting office (I'm guessing the book would be too big to go through the letterbox) just in case it's been taken back and the postie forgot to leave a card. Or he left a card and it got thrown away with junk mail.
Either way, I think it could still turn up. I sent a package to an eBayer in Scotland not long ago (2nd class, mind). She said it took three weeks to arrive. :o/
