The thing is, until there is any "evidence" of her guilt, she doesn't have to adduce any evidence (circumstantial or otherwise) of her innocence. If it's a total stalemate, with no proper evidence either way, then she is not guilty (even in Italy).
The Italian Police have backed themselves into a corner. They kept Amanda Knox in custody for so long that it was difficult for them to say "okay, okay, we've drawn a blank", and let her go. So ... they press on with a hair brained prosecution. If she is acquitted, the Police will blame the contrary jury for letting them down. If the jury are all insane and convict her, then the Police can say "we told you so".
