If a property is unregistered, can you add another member of the family to the deeds & would this still not show at LR, or if you are a partner in a family business can you include it into the company without other members of the family knowing, so on death it goes to the other partner. There is no morgage.
At what point does a property have to be registered at LR.

The property has to be registered when it changes ownership.

I am pretty sure (but not 100%) that adding an additional joint owner constitutes just that.
yes adding another owner counts as a transfer, so full ownership details will then need to be registered and will appear on the land registry
