my bf served 3 years out of the 6 years, while on license he assulted a police officer, what will happen when he goes to court? will he have to serve the remaining 3 years or get a shorter sentence??

What do you think he should get.Another 3 years is likely,but in view of the present
climate,probably 2 weeks in the South of France,all expenses paid.
I don't know the facts but I would assume he would be recalled to serve the rest of his sentence, plus a bit more to teach him not to go around assualting police officers.
I have read that if someone is on licence or parole, re-offending means that the release is revoked and he'll go back in. IMO.

The same sort of thing happend to my boyfriend got in trouble while on lisence! he went to prison to serve the rest of the lisence and then got a court date for the next offence with another sentence but it is up to the probation weather they run it consec on concurrent nothing to do with judge
If it's not been to court yet you can't assume that he will be found guilty of course. What if any charge(s) have been made?

he went to court last week, but that was to make a date for the cctv and see what happens which is actually tomorrow, they are charging him with assult to police officer but his solicitorsaid it depends on the cctv to see if he was provoked by the police, he head butted the officer but nothing more than that but i guess tomorrow will be d day
