When someone is charged with lets say murder, why is there such a long time between being charged and the trial beginning? Is it simply to allow enough time for prosecution and defence to gather information, etc?

More or less yes. The police have to complete their investigation, prepare the files, pass to prosecution, prosecution read them, ask police to check more things etc. Once prosecution have case files complete they pass certain documents to defence. Defence read them, check them etc. It all takes time.
Also to make sure the papers and TV have chance to post his face and details all over the place so when he is shown to be innocent, his life is still ruined.
