Why do so many famous people have them?

For example:

Elton John, Les Dennis, George Michael, Carly Simon, Sean Paul, Gary Lucy, Michelle Ryan etc.

Maybe to make them memorable.

It seems to have worked as you have listed quite a few.

Most of them aren't there real names anyway, could be that they have used a Christian name they would like to have been given at birth.

George Michael has dropped his surname and uses his first two names as Michael is more memorable than his Greek name

George Michael hasn't dropped them, his 'real' name is something like Georgios Michaelovolous or something.  Like Jonathon Bongiovi, he just shortened it.

it is funny how many use them - most change their name when they become famous - for example elton john was reg dwight and cliff richard was harry somebody or other! lol.
