Purchased A Lattice Pastry Cutter - Sausage Roll Recipes?

we do a Cake Day every pay day where I work. We take turns to bake sweet or savoury stuff a a fundraiser for our charity. We're all upping our game, I thought I'd do some lattice topped sausage rolls. The cutter has arrived, no instructions, anyone have a recipe for sausage rolls. Thought I'd do pork, sage & apple as a trial run, then next month, turkey, cranberry & chestnut. Just need a steer with the how to! Shortcrust or Puff Pastry? Thanks all
