It is also a sign of sexual attraction. I wTch the show before answering, and the only time she did it was when Marked returned to the house after the boardroom. No she is not on drugs, she fancies Mark.

I think it is just that our vision is drawn to particularly vivid blue eyes such as those that Roisin is lucky enough to possess - and that they can appear dilated, even when they are actually not.
