I'll be interested to see if anyone uses the spray bottle of water technique for their brûlée!

Opinion seems divided as to whether or not it helps the caramelisation process. I've never done it myself, just bung it under a very hot grill.
Well, I know they're not allowed a blow-torch...has to be finished under a grill.
I sometimes do it but have moved away from brûlée and if I want a creamy dessert tend to favour a posset, much less fanny-ar$ing about.

I do hope a contestant turns out a savoury cheesecake.
We should get you to enter it, Eccles.....bit like my sis, too professional probably!

I make a yummy creme brûlée if I do say so myself but don't use water - just granulated sugar and a blow torch
DTC, just remember Must not eat meringues
can't beat this yet...you are probably right, psybbs!
It works and that is a serious meringue! How much of it did you eat?
a nice chunk as it was the one day off on the diet - the coulis was unbelievably delish and served to counter the meringue......
