God I hate it when these supposed chefs use their hands and fingers to cook and plate up. Have they never heard of utensils ? How clean do you think their hands are ? I cannot believe they never touch their faces, wiping sweat etc. ( or scratching an itch). Plus their hair all over their faces.

I always think the same. The food is so fingered. Mainly since the trend for poncey food that's arranged over the plate like a work of art came into fashion. Food that's cooked in a wok is barely touched at all after cooking. Some cooks must hate the fact that a lot of restaurants have glass walled kitchens now - no more double dipping and wiping their noses on their hands.
At work I use gloves...providing the damn things don't split as I'm putting them on...for raw meat and for doing a crumble mix( the mix gets under the finger nails.)
I use tongs, etc for turning or picking up food. We also put tongs out for customers use as we have a lot of free food out for them. But believe me, a chef moving a few bits around on a plate is nothing after you've seen the hands of *some* homeless.
