God I hate it when these supposed chefs use their hands and fingers to cook and plate up. Have they never heard of utensils ? How clean do you think their hands are ? I cannot believe they never touch their faces, wiping sweat etc. ( or scratching an itch). Plus their hair all over their faces.

I definitely use my fingers as well as utensils. I am very careful with raw meat and take all necessary precautions. I consider myself a very good cook.
I dish up salad with my hands as well. You have to handle it to cut it anyway so what's the difference?
I tend to use utensils, but do use my fingers from time to time. I cannot BEAR any sort of grease on my hands so I sometimes use food grade gloves. Particularly if I am mucking about with poultry or game.

But when I am plating up, I always use utensils.

Using the same spoon to taste stuff gets me. Drives me potty.
I hate touching poultry too.
I always think the same. The food is so fingered. Mainly since the trend for poncey food that's arranged over the plate like a work of art came into fashion. Food that's cooked in a wok is barely touched at all after cooking. Some cooks must hate the fact that a lot of restaurants have glass walled kitchens now - no more double dipping and wiping their noses on their hands.
Hmmmm, preparing poultry is unbearable for me. I can handle red meat, but not poultry. Husband has to handle it.
I wear gloves. I've had to rub a marinade into chicken today, I'd hate it without gloves.

Even the smell of raw poultry makes me heave. I'm fine with blood in red meat.
I never wear gloves for doing anything!
I can’t bear people using a spoon repeatedly for tasting, either. When I tell my husband off for that he thinks I’m moaning about “his germs” in my food. Nothing to do with germs, just the enzymes in saliva starting to break the food down.
At work I use gloves...providing the damn things don't split as I'm putting them on...for raw meat and for doing a crumble mix( the mix gets under the finger nails.)
I use tongs, etc for turning or picking up food. We also put tongs out for customers use as we have a lot of free food out for them. But believe me, a chef moving a few bits around on a plate is nothing after you've seen the hands of *some* homeless.
I don't mind red meat either.

RR - it might have been working in a chicken factory that put me off.
