I, Er, Wonder Why All The Soap Coversations Begin This Way

I only watch Emmerdale and Corrie, which is two too many for some people, I know. But it seems to me that all conversations in these two soaps begin in one of two ways. The first is "Are you OK?" (with the variant "Are you all right?"). The other way is a bit harder to describe, but after the first word, which could be 'I' or 'You' or, if it's a question, 'Are you' etc there is an 'um' or an 'er'. What I would really like to know is, are the filler words written in the script, or do the actors put them in because they think it sounds more natural (in which case they are wrong). Whatever the reason, it really annoys me.
