Why Is Arm Wrestling So Fast?

So as a fan of many movies I really liked the tension put in television arm wrestling. Going back and forth, the struggle... well... basically a show like actual wrestling. But the past days I actually saw an arm wrestling tournament. A match didn't even last 10 seconds. As soon as the bell rang they tried to beat each other in an instant. Why are they going for that approach? Struggling a bit is what makes arm wrestling fun and a chance to test stamina and strenght. It feels like people just want to burst it and get it done. So... yeah, why is it so fast instead of a true strenght test?
