Where I live the roads names are theme based [poets/birds etc]. I used to live in Capsey road, surrounding ones were excalibur, lancelot, guinevere, merlin etc. Who or what was Capsey? was it really Merlin's cat?

Unlikely. You might find that he was a local dignitary and had his namesake tacked onto the end of a themed list of street names.

I just had a look and it does appear just to be a surname. There are well over 100 entries, mainly from the USA southern states, including the names of a couple of rivers. No mention of merlin, cats or any other history.
