There's something about every episode of the F Word, which really confuses me. Just before they start cooking and serving the first course, Ramsay will say something like "Okay...table one...four salmon, four duck and four yogurts...". Why does he do this, when at this point they're just doing the starter?
Isn't it to prepare the chefs who are cooking and preparing the other courses, so that they know what's coming up,how many portions etc? The waiter tells the kitchen when the customers have finished their starters and the chef will start cooking the main course knowing what it is from the first time the cheque hits the kitchen. That's how it has operated in restaurants I have worked in.
It's not quite the same on the F Word. They serve the whole of the restaurant the same starter, then there's a break, then they cook the whole restaurant the main, break, dessert.
