Using A Data Sim In A 4G Tablet - Help!

When I was in Greece recently the hotels wifi was so bad I could not get a continuous signal on my tablet. I now have a new tablet which is both wifi and 4G unlocked and it has a place to put a sim card ..........I have a Vodafone PAYGO non smart mobile which I use here and overseas and it works perfectly for calls anywhere in Europe....bear with me I am elderly!
So if I purchase say a Vodafone DATA 4G sim will that mean that I will get a good signal for my emails and google search as I do in UK and what will happen if the area in Greece I go to has only 3G.? Does that mean that 4G will not work at all? I am confused - please explain in simple terms.

Can I put in either 4G or 3G card as I only use it on hols a paygo type would cost me less but I would have to buy 30 days data for my 2 week hols. I do not understand GB of data but if I am only going to check my emails daily and occasionally google should 10gb be enough?
