How do you set the distance between yourself and the car in front when using adaptive cruise control on a VW Golf.

Perhaps not very helpful to you but on my Volvo there is a scroll wheel on one of the stalks which lets you choose 1 of 4 settings. IOncidentally, you set "time", rather than "distance" - in other words, on a given setting you will stay say 1 second behind the car in front, so the distance between you will very as your speed varies.
