Go with her to the dealers and ask them if it's the wrong mirror for that model. Does it match the other side ? if not - she is entitled to the correct mirror.

If it was me I would have asked her to sign a receipt in final settlement of the claim in case she wants to be daft and go through the insurance company at a later date.
It is illegal not to have a mirror each side of the car, it does not matter if they are different sizes or shape.
i had to replace mine of a citroen saxo which was also colour coded. bought one through ebay for 25, husband took colour coded strip off broken one and set it into replacement, he said this was very easy to do, and he put new one on. dealer is obviously charging for labour, so maybe worth a look on ebay. if its been on for a while and she now says its wrong shape, well in my opinion she should have checked this out when it was first put on so personally i would not be replacing it again, and if she wanted to take it any further you will have to stick it on and let her make the first move. hope this helps but i cannot help you on the true legal side of it.
