firstly, why would you want to do that?
Secondly, they have a sensor mounted on the frame of the mirror, this has to be blocked.
The next time you are in traffic and are able to, put your finger over this sensor and make sure the mirror goes back to normal. If it does, get something suitable and block the sensor.

Thanks sarnieken.
Firstly, because it does more than just take the dazzle out of headlights. It turns the rear view into a nighttime scene, so you cant see anything at all out of the central mirror except for headlights.
Secondly, we have tried the finger-over-it option and it doesnt seem to make any difference. Ill try a bit of bluetack and see if that helps. I cant tell whether its triggered by the headlights of a car behind, the Passats own lights being on or a light sensor because its getting dark.
