If you have posted an item to an address other than the one that is registered on paypal/ eBay then the paypal guarantee does not apply.
It is a common scam to ask for an item to be sent to a diffrent address and then claim it did not arrive and file a complaint to get the cash back.
I am afraid that in this case paypal will side with the buyer and take the cash back...

No useful advice, but I sympathies with you on the eBay/PayPal thing. When I was last conned by a seller I found one would reach a page where it insisted on a postage number I have no previous information that I was supposed to get one. That's a problem with dealing with machines and not human beings, they are just so inflexible.
Best of luck re your problem.
