When an act of courtesy by me is acknowledged by the other motorist raising their hand to me I always feel automatically compelled to acknowledge their acknowledgment by raising my hand back to them. Is this o.k. or will they think I'm mad?

No, completely proper, they thank you for letting them through, you then thank them.

Happens all the time 'round here, but then we are a polite lot.
I do the same.

It's fine; as long as you use more than two fingers.

When I stop to let oncoming cars through, and the driver doesn’t thank me for it by holding their hand up. I hold mine up anyway. For a silent sarcastic way of saying that’s OK mate You carry on.
