I want to buy a car from a private seller, but can't get insurance and tax until I buy it, so how do I get it home without breaking the law?

It should be straightforward for you to arrange for the car to be taxed before you collect it, perhaps by giving the seller the money for the tax in advance of collection.

If the seller is awkward and refuses to, arrange to pay for the car and tax it yourself before driving it away.

You can phone your insurance company and arrange insurance for a specific date in advance, so that's no problem.
Further to Ethel's useful comments. You can get your insurance company to send you a cover note. Take this with you and you can get it taxed from a post office before you drive it home. You also need the MoT (if its more than 3 years old) and the V5(log book). The other way to do it is to get the seller to deliver it to you.
I phoned my insurance co. for a cover note on the new car, and took the new owner piece of paper and MOT straight to the nearest post office( to the pick up point) , and got it taxed immediately just not worth risking doing anything else IMHO.
