Do you have to show your log book (by law) to get a plate made ?.
I got one today (without a document) through a company my firm deals with, but everyone says this is only because we deal with the co. and can be trusted.

I guess V5, maybe MOT and/or driving licence (or some other ID). This is to prevent criminals cloning cars or having false plates made up.
However, you can buy (on the internet) "show plates" intended for off road use only.
I had to buy show plates as local companies would not supply me with 6" x 12" plates with motorcycle sized font for my american car (when I bougt a private reg no).
The law (finaly) got passed allowing imported cars with an indentation too small to carry uk sized plates to carry the smaller ones.
As in a lot of cases, the Law is an ass! It states that to obtain new licence plates the applicant has to provide proof of ownership of the vehicle, and separate identification with a verifiable address. That'll stop the car theives; oh dear can't buy false plates any more, better stop my life of crime and get a proper job.
However, if the firm providing the plates makes "notices" for you then it is quite legal. They look like licence plates, work like licence plates and quack like licence plates. The only difference is that they were not sold as such, and it it that selling that the Law is about. Provided the VRM is correct for the vehicle, the size, colours and font used comply with the relevant standard, and that the spacing in normal then these "notice" licence plates are quite legal to use.
