Any suggestions - summer desserts to prepare ahead

Hi, We are doing the desserts for a progressive supper (ie where you have each course at a different neighbours' house.) I would welcome suggestions / recipes for summery desserts that I can prepare ahead - and just serve when we get to my house. There are 8 people - and I want about 4 different desserts. Thanks

Hi there is Eton Mess, can be made early and kept cool, summer pudding , again made in advance and kept in the fridge, trifle can be made early and I just adore jelly and ice cream !!

You can make a variety of cheesecakes topped with fruit and served with cream. These always improve with keeping in the fridge for a few hours.

I always make this http://www.bbc.co.uk/...chocolateandmin_87593 and serve it in either shot glasses, or little espresso cups with the saucers. It's easy to make and stays in the fridge until serving - and because of the glasses / cups it always looks really effective.

Panna Cotta Romano.
Bascially a creamy panna cotta but with the addition of coffee & tia maria or Kahula.
The recipe is in last sunday's You magazine, page 51.

If you dont want to cook my old stand by is profeterols and red berries with cream or that GU plain choc totre with berries is good too

If you are feeling like cooking cherries (pitted of course) poached in red wine ,sugar and cinnaamon with ice cream - dont over cook the cherrys they should still have a bit of bite

we used to do this years ago, we called them safari suppers and we all got completely smashed as we had wine with every course and could barely make it to the next house.
anyway, a dessert which always stands out was half a pineapple, scooped out and filled with all kinds of fruit and marshmallows, topped off with sparklers and a can of squirty cream to pass/squirt round, very messy but very funny at the time, and actually a nice summery dessert.
