For more on marking an answer as the "Best Answer", please visit our FAQ.On all pianos, the right hand pedal is the sustain pedal and lifts the dampers off the strings, so that they continue to ring after you've released the note. The left hand pedal is the soft pedal, and usually moves the hammer action slightly askew so that the hammers only strike one string per note (instead of two or three) making the general sound quieter.
The middle pedal's function depends on whether the piano is an upright or a grand. On an upright it's a practice pedal, dropping a big piece of felt on the strings to make the piano really quiet and not annoy the neighbours. On a grand, it acts like the sustain pedal but only sustains the note(s) you strike as you depress it, allowing you to leave some notes sustained but others not (complicated!!)
